You'll need: 1 kit (dal + spice pack) · 3 cups water · 1 tsp oil or ghee · 1 tomato chopped (optional) · medium saucepan with lid

Rinse the dal under cold running water until the water runs clear.

Heat 1 tsp oil or ghee in a saucepan over medium heat. Add the spice pack and stir for 30–45 seconds until fragrant.
Toasting the spices unlocks deeper, richer flavor.

If using tomato, add chopped tomato now and cook for 2–3 minutes until soft.
Tomato adds a slight tang and richness — completely optional.

Add rinsed dal and 3 cups water. Stir and bring to a boil over high heat.

Reduce heat to low, cover and simmer 25–30 minutes — stirring occasionally — until dal is completely soft.
Add more water if it gets too thick.

Add salt to taste. Finish with a squeeze of lemon and fresh cilantro. Serve hot.
Tip: Dal fry thickens as it cools — add a splash of water and reheat to restore consistency.
Electric pressure cooker method
Instant Pot or any brand · Prep 5 min · Total 25 min · Serves 2–3
You'll need: 1 kit (dal + spice pack) · 2.5 cups water · 1 tsp oil or ghee · 1 tomato chopped (optional) · electric pressure cooker

Rinse the dal under cold running water until clear.

Set to Sauté mode. Add oil or ghee and spice pack. Stir 30–45 seconds until fragrant.

If using tomato, add now and sauté 2 minutes until soft. Cancel Sauté.

Add rinsed dal and 2.5 cups water. Secure lid and set valve to Sealing.

Pressure cook on High for 8 minutes. Allow 10 minutes natural release then vent remaining steam.
Chana dal needs longer cook time than masoor dal.

Stir well, add salt and lemon to taste. Top with fresh cilantro and serve hot.
Tip: Dal fry is meant to be thick — if too thin, use Sauté mode for 2–3 minutes after cooking to reduce.
